Southwest Chicken
A favorite go-to meal when you're in the mood to wake up our taste buds!
Ingredients:
- 1 Tablespoon Vegetable Oil
- 1 Teaspoon Minced Garlic
- 1/2 White Onion, Chopped
- 2 Skinless Boneless Chicken Breast, Cut Into Bite Size Pieces
- 1 Tablespoon Taco Seasoning
- 1/2 Cup Diced Tomatoes with Green Chile Peppers
- 1/2 Cup Black Beans, Rinsed and Drained
- 1 Package Frozen Corn
- 1 Teaspoon Garlic Powder
- 1 Teaspoon Chili Flakes
- 1 Teaspoon Salt
- Serve with Cooked Jasmine Rice
Instructions:
1. Add Vegetable Oil to a large pan over Medium High Heat. Add Minced Garlic and Chopped Onion to the pan.
2. Add 2 Tablespoons Water, Taco Seasoning and Chicken to the pan. Cook until the chicken is browned and cooked through.
3. Remove chicken and set to the side.
4. Add Diced Tomatoes to pan. Add Black Beans, and Corn. Season with Garlic Powder, Chili Flakes and Salt. Combine well.
5. Return Chicken to the pan. Stir until everything is well combined.
6. Serve over Cooked Jasmine Rice and Enjoy!
