      Biscotti D'estate

      Ingredients:

      • 10 Tablespoons Unsalted Butter at Room Temperature
      • 1  1/3 Cups Sugar
      • 3 Large Eggs
      • 2 Teaspoons Vanilla Extract
      • 1/2 Teaspoon Almond Extract
      • 3 1/4 Cups Whole Wheat Flour
      • 4 Tablespoons Lemon Juice
      • Zest from 1 Lemon

      For Icing

      • 1 Cup Confectioners Sugar 
      • 2 Tablespoons Fresh Squeezed Lemon Juice

      Instructions: 

      1. Preheat your oven to 350ºF. 
      2. On a piece of Parchment Paper, measure out 2 rectangles that are 10x2 Inches. Lay paper with the drawn side facing down on a Baking Sheet. Set aside.
      3. Add Butter and Sugar in Mixer and cream until fluffy. 
      4. While mixing, add Eggs in 1 at a time. Add Vanilla Extract and Almond Extract. Add Lemon Juice and Lemon Zest.
      5. Whisk Flour, Baking Powder, and Salt together in a bowl. Add to Butter Mixture and mix until dough becomes sticky and thick.
      6. Divide your dough in half. Shape each log onto the prepared baking sheet. Wet hands if needed.
      7. Bake for 25 to 30 Minutes or until lightly golden. Give a generous cool, about 20 Minutes. 
      8. Use serrated edge of knife gently, once pierced, pushed knife down. Do not saw back and forth to avoid crumbling. Lay pieces cut side down back onto baking sheet.
      9. Bake for 10 minutes per side or until they've reached a nice golden color. Cool completely. 
      10. Combine Confectioners Sugar with Lemon Juice. Drizzle Icing over Biscotti.
      11. Let Icing Dry Completely. Bag and Share with Friends.

      Pineapple Casserole

      Pineapple Casserole

      Ingredients

      • Cooking Spray
      • 6 Tablespoons All Purpose Flour
      • 1/3 Cup Granulated Sugar
      • 1 Can (20 oz) Pineapple Chunks, Drained (Reserve 1/2 Cup of Juice)
      • 1 Can (20 oz) Crushed Pineapple, Drained
      • 1 Cup Shredded Sharp Cheddar Cheese
      • 1 Sleeve of Ritz Crackers (32 crackers), Crushed
      • 4 Tablespoons Butter, Melted

      Instructions:

      1. Preheat your oven to 350ºF.
      2. Whisk together Flour, Sugar, and 1/2 Cup Reserved Pineapple Juice in a large bowl until well combined. Add in both the Crushed Pineapple and Chunks into the bowl. Toss to coat. Transfer to baking pan.
      3.  Distribute Cheese evenly on top. Top with Crushed Crackers. Drizzle melted Butter over.
      4. Pop in the oven for 30 to 35 Minutes, or until golden brown. 
      5. Serve immediately and enjoy!

       

      Chocolate Zucchini Bundt Cake with Chocolate Ganache

      Chocolate Zucchini Bundt Cake with Chocolate Ganache

      Ingredients:

      • 1 1/4 Cup Water
      • 1/2 Bag Chocolate Chips
      • 1 Cup Chopped Walnuts
      • 1 Can Ready Made Fudge Frosting
      • 1/2 Cup Vegetable Oil
      • 1 1/2 Cup Grated Zucchini
      • 1 Box Devil's Food Cake Mix

      Directions

      1. Preheat oven to 325 degrees.
      2. Grate zucchini and set aside.
      3. Chop nuts and set aside.
      4. Mix cake mix according to directions on the box.
      5. Add nuts, chocolate chips and zucchini to the mixed cake.
      6. Grease bunt pan and dust with cocoa powder.
      7. Pour mixture into bundt pan.
      8. Bake in oven at 325 degrees for 35 to 45 minutes, or until an inserted toothpick comes out clean.
      9. Remove from pan while still hot by placing plate on top of bundt pan and flipping. Remove pan from the cake. (Doing this while cake is hot prevents it from sticking).
      10. Let cool until warm.
      11. Heat can of frosting in microwave for 30 seconds. Stir, and drizzle over top of cake until it drips nicely down the sides.
      12. Let cool completely before slicing.
