      Smashed Broccoli Crisps

      Smashed Broccoli Crisps

      Ingredients:

      • 2 Lbs Broccoli Florets
      • 1/3 Cup Shredded Pecorino or Parmesan Cheese 
      • 5 Tablespoons Avocado Oil
      • 1 Tablespoon Lemon Zest
      • 1/2 Teaspoon Oregano
      • 1/2 Teaspoon Garlic Powder
      • Salt & Pepper, to Season

      Instructions:

      1. Preheat your oven to 425ºF.  Line a baking sheet with parchment paper. Add a thin layer of Finely Shredded Pecorino (or Parmesan) onto the sheet.
      2. Fill a large pot half way with water. Bring to a boil. Add the Broccoli Florets to the pot, along with a Teaspoon Salt.
      3. Blanch the Broccoli for about 6 minutes (time will range based on size of florets). When ready, Strain and transfer to an ice bath, then pat dry on a paper towel. 
      4. Add the broccoli onto the baking sheet over the cheese. Taking a glass cup or jar, gently press the bottom over the broccoli to "smash" it. 
      5. Combine Avocado Oil, Oregano, Garlic Powder, Lemon Zest into a bowl. Brush over the Smashed Broccoli. Season the Broccoli with Salt.
      6. Pop in the oven and let it roast for anywhere from 20 to 30 Minutes. The chips should be crispy on the outside, but tender inside.
      7. Allow to cool. Break apart. 
      8. Serve & Enjoy!

      Ted's Best Guacamole

      Ted's Best Guacamole

      Ingredients:

      • 3 Avocados, Ripe
      • 1/2 Small Yellow Onion (or Red Onion if preferred), Finely Diced
      • 2 Roma Plum Tomatoes, Diced
      • 3 Tablespoons Finely Chopped Fresh Cilantro
      • 1 Jalapeño Pepper, Seeds Removed and Finely Diced
      • 2 Garlic Cloves, Minced
      • 1 Lime, Juiced
      • 1/2 Teaspoon Sea Salt

      Instructions:

      1. Cut the Avocados in half, remove pits, and scoop into a bowl. 
      2. Mash with a fork to desired consistency.
      3. Add remaining ingredients into the bowl. Stir together. Adjust Salt and Lime Juice according to taste.
      4. Serve and Enjoy with your favorite chips!
