      Smashed Potatoes

      Smashed Potatoes

      Ingredients:

      • 1 Lb Baby Potatoes
      • 2 Tablespoons Olive Oil 
      • Salt and Pepper
      • 1/4 Teaspoon Cumin
      • 1/4 Teaspoon Paprika
      • 1 Tablespoon Fresh Parsley, Chopped
      • 1/4 Cup Shredded Parmesan Cheese

      Instructions:

      1. Preheat your oven to 425ºF.
      2. Add Potatoes to Boiling Water and allow to cook until tender (time will vary based on size of potatoes)
      3. Drain the Potatoes and allow to dry in the colander.
      4. Place the Potatoes on a tray. Smash with fork, or bottom of a glass. (The thinner they are the crispier they will be.) Let sit for 5 minutes.
      5. Drizzle on Olive Oil, Season with Salt and Pepper, Cumin and Paprika. Sprinkle on Parsley.
      6. Pop in the oven and bake for 20 minutes. Flip and bake for another 15 minutes, or until they've reached desired crispiness. 
      7. Remove from oven and sprinkle on Parmesan cheese. Roast until Cheese has melted.
      8. Serve and Enjoy!

      Smashed Broccoli Crisps

      Smashed Broccoli Crisps

      Ingredients:

      • 2 Lbs Broccoli Florets
      • 1/3 Cup Shredded Pecorino or Parmesan Cheese 
      • 5 Tablespoons Avocado Oil
      • 1 Tablespoon Lemon Zest
      • 1/2 Teaspoon Oregano
      • 1/2 Teaspoon Garlic Powder
      • Salt & Pepper, to Season

      Instructions:

      1. Preheat your oven to 425ºF.  Line a baking sheet with parchment paper. Add a thin layer of Finely Shredded Pecorino (or Parmesan) onto the sheet.
      2. Fill a large pot half way with water. Bring to a boil. Add the Broccoli Florets to the pot, along with a Teaspoon Salt.
      3. Blanch the Broccoli for about 6 minutes (time will range based on size of florets). When ready, Strain and transfer to an ice bath, then pat dry on a paper towel. 
      4. Add the broccoli onto the baking sheet over the cheese. Taking a glass cup or jar, gently press the bottom over the broccoli to "smash" it. 
      5. Combine Avocado Oil, Oregano, Garlic Powder, Lemon Zest into a bowl. Brush over the Smashed Broccoli. Season the Broccoli with Salt.
      6. Pop in the oven and let it roast for anywhere from 20 to 30 Minutes. The chips should be crispy on the outside, but tender inside.
      7. Allow to cool. Break apart. 
      8. Serve & Enjoy!

      Ted's Best Guacamole

      Ted's Best Guacamole

      Ingredients:

      • 3 Avocados, Ripe
      • 1/2 Small Yellow Onion (or Red Onion if preferred), Finely Diced
      • 2 Roma Plum Tomatoes, Diced
      • 3 Tablespoons Finely Chopped Fresh Cilantro
      • 1 Jalapeño Pepper, Seeds Removed and Finely Diced
      • 2 Garlic Cloves, Minced
      • 1 Lime, Juiced
      • 1/2 Teaspoon Sea Salt

      Instructions:

      1. Cut the Avocados in half, remove pits, and scoop into a bowl. 
      2. Mash with a fork to desired consistency.
      3. Add remaining ingredients into the bowl. Stir together. Adjust Salt and Lime Juice according to taste.
      4. Serve and Enjoy with your favorite chips!
