The Best Blueberry Muffins
These are easily the very best Blueberry Muffins we've ever had...Covered with a delicious Crumb Topping!
Ingredients:
- 1/2 Cup White Sugar
- 1/3 Cup All Purpose Flour
- 1/4 Cup Lightly Salted Butter, Cubed
- 1 1/2 Teaspoons Ground Cinnamon
- 1 1/2 Cups All Purpose Flour
- 3/4 Cup White Sugar
- 2 Teaspoons Baking Powder
- 1/3 Cup Applesauce
- 1 Egg
- 1/3 Cup Skim Milk
- 2 Cups Fresh Blueberries
- Preheat your oven to 400°F.
- Line a muffin tin with muffin liners.
- Combine 1/2 Cup Sugar, 1/3 Cup Flour, 1/4 Cup Butter, Cinnamon into a small bowl and mix together using a fork, until the mixture becomes crumb-like.
- Combine the 1 1/2 Cups Flour, 3/4 Cup Sugar and Baking Powder into a bowl.
- Place the Applesauce into a 1 Cup Measuring Cup. Add the Egg and enough Milk to fill the measuring cup.
- Mix the Applesauce mix in to the Flour Mixture.
- Fold in the Fresh Blueberries (make sure you wash them off first and pat dry).
- Fill the muffin tin with the mixture and sprinkle the Crumb Topping on top.
- Bake until the muffins are golden, which should take about 20 to 25 Minutes.
- Serve and Enjoy!
