One Pan Dish ~ Turkey & Butternut Squash Skillet
Great for meal prepping lunch for a few days or just a healthy family dinner. An Easy One Pot Meal.

Ingredients:
- 2 Tablespoons Extra Virgin Olive Oil
- 2 Tablespoons Fajita Seasoning
- Salt and Pepper, To Taste
- 2 Cups Fresh Butternut Squash, Cubed
- 1/2 Large Onion, Chopped
- 1 Frozen Bag of Cauliflower Rice
- 1 Lb Ground Turkey
- 3 Cloves Garlic, Minced
- 4 Eggs
- 2 Cups Baby Spinach
Instructions:
- Microwave cauliflower rice for about 5 minutes or follow packaging directions.
- While rice is being heated, heat EVOO in a large skillet sauté Butternut Squash until tender.
- Stir in chopped onions for 3-4 minutes and then minced garlic for another minute or so adding in some of the fajita seasoning while cooking.
- Remove squash, onion and garlic from pan and set aside.
- In same pan, brown the ground turkey until cooked thoroughly sprinkling fajita seasoning and salt and pepper.
- Crack 4 eggs in stirring constantly until cooked. Add the veggies back in and drained cauliflower rice and stir all together.
- Top off with baby spinach and stir until cooked. Shredded cheese can be added if you wish. Serve and enjoy.
