Pistachio, Fig & Cranberry Goat Cheese Chicken

- 1/3 Cup Dried Mission Figs, Chopped
- 4 oz Cranberry Goat Cheese
- 4 Skinless Boneless Chicken Breast Halves
- 2 Tablespoons Pistachios, Chopped(Plus more for Garnish)
- Salt
- Fresh Ground Black Pepper
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Onion Powder
- Cooking Spray
- 1/4 Cup Balsamic Vinegar
- 1/4 Cup Fig Jam
Instructions:
- Preheat your oven to 400ºF.
- In a small bowl, combine Figs, Goat Cheese, Pistachios, Salt & Pepper, Garlic Powder and Onion Powder.
- Cut a slit horizontally through the thickest part of the Chicken Half to form a pocket.
- Stuff each of the Breasts with about 3 Tablespoons Cheese Mixture. Secure with twine. Season the Chicken with Salt and Pepper.
- Place a cast iron skillet over Medium High Heat. Coat well with Cooking Spray. Bring Chicken to the pan and Cook for 2 Minutes. Flip Chicken over. Bake for 15 Minutes in the oven until it has completely cooked through (roughly 15 Minutes).
- Remove from oven and allow to stand for 2 Minutes.
- In a bowl combine Balsamic Vinegar and Fig Jam. Add to the pan.
- Allow to stand for 5 Minutes. Remove the twine.
- Cut the Chicken Diagonally in 1/2 Inch Thick slices. Take Sauce and drizzle over the Chicken.
- Sprinkle Chopped Pistachios on top before serving.
