Chicken Tortilla Soup
Love Tacos? This Soup is the Perfect Weeknight Meal. Just set it and forget it!
Ingredients:
- 1/2 Medium Onion, Chopped
- 3 Cups Chicken Broth
- 1 Jar Salsa
- 1 15 oz Can Black Beans, Drained and Rinsed
- 1 12 oz Can Corn, Drained
- 1 Red Bell Pepper, Chopped
- 1 Tablespoon Chili Powder
- 1 Tablespoon Garlic Powder
- 1 Teaspoon Ground Cumin
- 1 Teaspoon Smoked Paprika
- 4 Chicken Thighs
- Tortilla Strips, To Serve
- Shredded Mexican Style Cheese, To Serve
Instructions:
- Combine all ingredients in Crock Pot. Set on Low for 6 - 8 Hours, or on High 3 to 4 Hours.
- Top with Cheese and Tortilla Strips.
- Serve and Enjoy!
