Smashed Potatoes
Ingredients:
- 1 Lb Baby Potatoes
- 2 Tablespoons Olive Oil
- Salt and Pepper
- 1/4 Teaspoon Cumin
- 1/4 Teaspoon Paprika
- 1 Tablespoon Fresh Parsley, Chopped
- 1/4 Cup Shredded Parmesan Cheese
Instructions:
- Preheat your oven to 425ºF.
- Add Potatoes to Boiling Water and allow to cook until tender (time will vary based on size of potatoes)
- Drain the Potatoes and allow to dry in the colander.
- Place the Potatoes on a tray. Smash with fork, or bottom of a glass. (The thinner they are the crispier they will be.) Let sit for 5 minutes.
- Drizzle on Olive Oil, Season with Salt and Pepper, Cumin and Paprika. Sprinkle on Parsley.
- Pop in the oven and bake for 20 minutes. Flip and bake for another 15 minutes, or until they've reached desired crispiness.
- Remove from oven and sprinkle on Parmesan cheese. Roast until Cheese has melted.
- Serve and Enjoy!
