Chicken Salad
Enjoy this Tried and True, very easy Chicken Salad.
Ingredients:
- 2 cups chopped, poached Chicken Breasts
- ½ cup Chopped Walnuts
- ½ cup Mayonnaise
- 2 tbsp Dijon Mustard
- 1 Stalk Celery
- ¼ cup Carrots
- Chopped Spring Onions
- Assorted Spices: Black Pepper, Garlic Powder, Onion Powder, Paprika
- Optional: Lettuce or Parsley for garnish
Instructions:
- Poach Chicken Breasts in flavored poaching liquid until fully cooked
- Remove bone and chop or shred Chicken Breasts
- In a separate bowl, thoroughly mix together Walnuts, Mayonnaise, Dijon Mustard, Celery, Carrots, Spring Onions, and Seasoning to taste
- Toss in Chicken with mixture until everything is mixed well
- Serve cold, keep in refrigerator for 3-5 days
