Mixed Berry Cake
Ingredients:
- 1 3/4 cups flour
- 1/2 tsp salt
- 1 tsp baking powder
- 5 tsp baking soda
- Zest of two lemons
- 1 1/4 cups granulated white sugar
- 3/4 cup butter, softened
- 5 tsp vanilla
- 2 eggs
- 2/3 cup sour cream
- 1/3 cup blueberries
- 1/3 cup raspberries
Instructions:
- Preheat oven to 350 degrees and prepare a round pan by greasing with butter
- Mix dry ingredients (Flour, Salt, Baking Powder, Baking Soda, and Lemon Zest) together until well combined
- Toss berries in with dry ingredients until well coated to prevent from sinking
- Cream together butter, sugar, vanilla, eggs, and sour cream.
- Combine dry and wet ingredients until just combined
- Pour batter into prepared pan
- Top with extra berries
- Bake for 30-45 minutes or until cake is fully cooked
- Serve cake at room temperature
