Recipe Type: Entree
- 6 Fresh Boneless Chicken Breasts
- Filling:
- 2/3 Cup Apricots, Chopped
- 3 Tablespoons Chopped Onion
- 2 Tablespoon Sliced Almonds
- 1 Tablespoon Parsley
- 1/4 Teaspoon Salt
- Sauce
- 1 Cup Plain, Nonfat Yogurt, Warmed
- 1/2 Cup Apricots Chopped
- 1/3 Cup Dijon Mustard
- 1 Teaspoon Sugar
- Preheat your oven to 375°F.
- Mix all ingredients for the apricot Filling in a bowl well.
- Take each piece of chicken and add apricot mixture into the center of the chicken. Roll. Securely fasten with toothpicks.
- Bake for 30 to 40 minutes.
- Meanwhile, warm up ingredients for the Yogurt Sauce. Serve a spoonful over each chicken breast.
