| Salmon with Grapefruit Dressing |

Recipe Type: Entree
- 3 Florida Red Grapefruit, Divided
- 2/3 Cup Sugar
- 8 oz Cream Cheese, Cut Into Cubes
- 1/2 Cup Hidden Valley Ranch Dressing, Divided
- 3 Lb Salmon Fillet
- 1 Bunch Green Onions, Chopped
- Preheat your oven to 450°F.
- Take 2 of the grapefruits and juice them into a small saucepan. Add the sugar into the pan and turn onto medium-high heat. Let cook for 25 minutes or until the sugar is dissolved (juice will be reduced by half).
- Pour grapefruit sauce into a blender. Add in the cubed cream cheese and put the cover on. Blend until smooth. Set to the side and keep warm.
- Line a 15x10x1 Inch baking pan with aluminum foil. Take 1/4 cup of the Ranch Dressing and pour into pan. Put in the oven and let it heat up for 5 minutes. Take out of the oven.
- Lay the salmon down into the pan immediately, with the skin side facing up. Use the remaining Ranch Dressing to top the salmon. Put back in the oven and bake for 20 to 25 minutes, or until the salmon easily flakes with a fork. Turn once after 12 minutes while baking.
- Combine your grapefruit dressing with onions and leftover grapefruit. Add on top of the Salmon. Serve.
