| Cornish Hens In Sweet Raisin Sauce |

Recipe Type: Entree
- 1 Tablespoon Vegetable Oil
- 1 Cup Chopped Yellow All Purpose Onion
- 1/3 Cup Chopped Fresh Parsley
- 1 Cup Raisins
- 2 Teaspoons Pepper
- 2 Teaspoons Ground Cinnamon
- Pinch of Cloves
- Pinch of Saffron
- Salt
- 4 Perdue Cornish Hens
- 1 Cup Sue Bee Honey
- Heat up oil in a medium skillet. Take the chopped onion and parsley and add to the pan. Cook, while stirring, for 2 to 3 minutes (or until it is soft). Add raisins, pepper, cinnamon, cloves, saffron and salt.
- Take the onion mixture and use to season the hens inside and out.
- Place hens on a rack in roasting pan.
- Preheat your oven to 375°F. Roast hens for 25 minutes. Take out of the oven and pour 1/2 inch of water into the pan.
- Spread honey over hens to coat. Bring back to the oven. Lower the heat to 350°F. Let roast for 15 minutes, or until tender and golden brown.
- Transfer hens from oven to a serving platter.
- Take the juices from the pan and boil down over a hot burner, correct seasonings.
- Spoon sauce over the hens and serve.
