As much as we love the fall, we can’t help but miss the summer heat. We could all use a quick getaway sometimes. If you’ve run out of vacation days…take a quick trip to the islands. Sip on some Vita Coco. It will take you away from that tiny cubicle in the office to somewhere warm and peaceful. It tastes just like you stuck a straw into a coconut! Enjoy the drink as it is, or use it to make a smoothie. We made our Vita Coco Smoothie by adding 3 cups frozen Dole Slice Strawberries, 1 Banana, and 1 cup Vita Coco. Throw it all in your blender (add ice if you’d like) and puree until it is smooth. It is unbelievably refreshing!
If you made our recipe for Vita Coco Salad Dressing last night, bring the leftovers to enjoy on your salad made of Tender Red & Green Leaf Lettuce. Slice up a Large Size Bartlett or Bosc Pear and pieces of a McIntosh Apple.
Pistachios

Pistachios are a fantastic source of fiber and protein. For all of you out there who have problems with portion control, this is the snack for you. In other words, because it takes longer for someone to eat a pistachio in comparison to other snacks, they become more aware of how much they are actually eating. They also are one of the lowest fat nuts and have antioxidant capacity.
Whole Unblanched Almonds
Whole Unblanched Almonds have incredibly high amounts of Vitamin E, making them a powerful antioxidant. They contain Magnesium, which makes your Cardiovascular System more efficient by delivering more oxygen and nutrients to the body. They also have high amounts of Potassium stabilizing the heart muscle and blood pressure.
Add them on top of your salad for a healthy lunch, or just pack them separately in a plastic bag to eat in between meals. You can also try crushing them up and store in a small container to pack up with your Dannon Yogurt. Add the crushed Almonds on top for a heart healthy snack.
If you’re at home, try making your own Almond Butter. Place 2 cups of your almonds into a food processor. Begin processing, while stopping periodically stopping to scrape down the sides, for about 8-12 minutes. When you first begin grinding the almonds, they will be powder like. After about 8 minutes they should begin clumping together. Continue to process until the oils from the almonds begin to release. It should take 12 minutes for the butter to be completely ready. Taste test your Almond Butter. Some like to add about a Tablespoon of Honey and salt to taste, but that is optional. Spread it on a slice of Trucchi’s 100% Wheat or Multigrain Bread or spread on your favorite crackers. We love dipping slices of Apples and Pears into our Almond Butter.
