| Slow Cooked Pork and Veggies |

Recipe Type: Entree
- 2-3 Lbs Fresh Pork Tenderloin
- 4 Yukon Gold Potatoes
- 3 Carrots
- 1 Vidalia Onion
- 5 Garlic Cloves
- Salt and Pepper, To Season
- Use salt and pepper to season the pork tenderloin. Add oil into a pan and place over high heat.
- Place the tenderloin into the pan and brown on all sides.
- Meanwhile, dice up the potatoes and carrots into small bite sized pieces.
- Peel and slice the onion into large pieces.
- Transfer the pork once it has browned to the crock pot.
- Deglaze the pan using a cup of water or stock. Pour the water as well as all the drippings into the crock pot.
- Take the onion slices and garlic cloves and tuck around the pork.
- Add in potatoes and carrots.
- Season with salt and Pepper. Add water so the vegetables are almost completely covered.
- Place the cover on the cooker and set to Low. Let cook for 8 – 12 hours. (Or on High for 4 – 6 hours). IMPORTANT: Depending on what crock pot you have, cooking time may vary widely. You will know it is done by reading the internal temperature and making sure it is at the very least 145°F.
