Recipe Type: Entree
- 4 Tablespoons Butter, Softened
- 2 Tablespoons Fresh Chopped Basil
- 5 Cups Sliced White Mushrooms
- 4 Stalks California Celery, Sliced
- 1 Bunch Scallions, Sliced
- Kosher Salt and Fresh Ground Pepper
- 4 Fresh Tilapia Fillets
- Preheat your oven to 400°F.
- Mix together the butter and basil in a small bowl. Set to the side.
- Cut 4 large pieces of foil and lay them out. In the center of each piece, layer the vegetables starting with the mushrooms, then celery and scallions.
- Add some of the herbed butter on top (Use about half of the butter for the veggies). Season each portion with salt and pepper.
- Lay the fillets over the vegetables. Dot with the remaining butter. Sprinkle with salt and pepper to taste.
- Taking the ends of the foil, bring together and fold over to seal all sides and make a packet. Put the packets onto a baking sheet. Put in the oven until the fish is cooked through (make sure its still moist), which should take about 18 to 22 minutes.
- Take the packets out of the oven and let them sit for a couple minutes before opening the foil.
- Transfer the Tilapia and veggies to dinner plates. Serve.
