| Loaded Potato Skins |
- 4 Premium Idaho Potatoes
- 1 Stick Butter
- 1 Cup Grated Cheddar Cheese
- 3/4 Cup Milk
- 2 Tablespoons Chopped Chives
- Salt and Pepper, To Taste
- 4 Strips Plumrose Bacon, Cooked and Crumbled
- Preheat your oven to 425°F.
- Wash the potatoes well and poke with a fork a few times.
- Put in the oven and let them cook for an hour (or until potato is cooked through).
- Take out of the oven and let them cool down for about 10 minutes.
- Cut the potatoes in half lengthwise, and scoop out the pulp into a mixing bowl. Be sure you do not break the skin.
- Mash the potatoes with butter, cheese, milk, chives and bacon. Taste and adjust seasoning with salt and pepper.
- Add the mashed potatoes back into the potato skins.
- Place in a baking dish and put back in the oven to heat thoroughly. Serve.
