| Apple Stuffed Acorn Squash |

Recipe Type: Entree
- 2 Acorn Squash, Halved, Seeded
- 2 McIntosh or Cortland Apples, Peeled, Cored and Sliced Thinly
- 4 Teaspoons Butter
- 4 Tablespoons Brown Sugar
- 1/2 Teaspoon Ground Nutmeg
- 1 Teaspoon Ground Cinnamon
- Preheat your oven to 350°F.
- Grease baking dish with butter and lay each piece of acorn squash into the dish (cut side down).
- Poke holes with fork on skin side of the squash. Cover and put in the oven for 30 minutes.
- While the acorn squash is baking, take a small bowl and mix together the butter, ground cinnamon, ground nutmeg and brown sugar.
- After the mixture is stirred together well, add slices of apple to the bowl, coating the apples well.
- Once the acorn squash is done baking, remove from the oven.
- Flip the squash to the other side, and evenly distribute the apple mixture into each acorn squash “bowl”.
- Put the cover back onto the dish and bake for another 30 minutes. Serve and enjoy!
