Recipe Type: Entree
- 1 Lb Andy Boy Broccoli Rabe
- 1 Package Prince Medium Shell Pasta
- 2 Tablespoons Water
- 5 Cloves Garlic, Thinly Sliced Use Super Colossal Size Fresh Garlic
- 1/2 Lb Trucchi’s Brand Italian Sausage, Sliced
- 1 Cup Trucchi’s Italian Bread Crumbs
- Salt
- Grated Locatelli Romano Cheese
- Cut the broccoli rabe into pieces about 4 Inches long. Toss the stems.
- Fill a large pot with water and bring to a boil. Blanch the broccoli rabe into the boiling water until it is tender and cooked through.
- This should take about 5 minutes or so. Reserve 1 Cup of the cooking liquid before draining the broccoli rabe.
- Rinse with cold water until cooled down. Lay down onto a towel, spread out to finish draining.
- Cook the pasta in a large pot of boiling water and cook according to the directions on the package.
- Meanwhile, place 2 tablespoons of water into a cold skillet. Add garlic and sausage. Then turn the heat to medium low.
- Stirring occasionally, let it cook until the garlic is golden and the sausage is cooked through (5 to 7 minutes).
- Take your reserved cooking liquid and pour into the pan with the sausage. Once the pasta is cooked, drain and return to the pot it was cooked in. Season with salt.
- Pour the sausage sauce into the pot of pasta. Stir in the cooked broccoli rabe.
- Taste to check and see if you need to adjust seasonings.
- Top off by sprinkling bread crumbs and Romano Cheese. Serve.
