| Apple Craisin Pork Chops |
- Assorted Bone-In Pork Chops
- 2 Tablespoons Napoli Extra Virgin Olive Oil
- 1 Yellow All Purpose Onion, Sliced
- 1 Bag Cornbread Stuffing Mix
- 1 Cup Apple Juice
- 3 Apples, Peeled, Cored & Sliced
- 1/4 Cup Chopped Ocean Spray Craisins
- Season both sides of the chops with salt and pepper.
- Heat the chops in olive oil over medium high heat until they are browned.
- Transfer the chops to a plate. Keep the cooking oil in the skillet and use it to caramelize the onions. Transfer to plate with the pork.
- Add butter to the pan. When it begins to bubble, add the pears to the skillet. Let the pears cook for a couple minutes until they soften.
- Add the apple juice. Let simmer for 1 minute.
- Take a casserole dish and stir together the stuffing mix, pears, onions and Craisins with a fork.
- Place the chops on top of the mixture in the casserole dish with the onions.
- Cover with foil and bake at 350°F. Bake for about 40 minutes, or until the pork has reached the internal temperature of 160°F. Serve.
