| Lime Grape Salsa Topped Chicken |
- 1 Lb Fresh Boneless Chicken Breast
- 1/2 Cup Honey Mustard
- For Salsa:
- 1 Cucumber, Peeled, Seeded and Chopped
- 2 Cups California Green Seedless Grapes, Cut In Half
- 1/3 Cup Freshly Squeezed Lime Juice
- 2 Tablespoons Olive Oil
- Freshly Ground Pepper and Salt – Use McCormick Grinders, To Season
- Preheat your grill to medium heat.
- Take your chicken and brush both sides well with the honey mustard. Set to the side.
- Take all the remaining ingredients for the salsa and mix together in a bowl. Set aside.
- Cook the chicken breasts on the grill until they are cooked (no longer pink, make sure to check the thickest portions of the breast).
- Transfer the chicken to serving plates and top off with the Lime Grape Salsa.
