Recipe Type: Entree
- 2 Large European Cucumbers, Peeled, Seeded and Sliced Thinly
- 1/4 Cup Red Onion, Sliced Thinly
- 3 Tablespoons Rice Vinegar
- 2 Teaspoons Toasted Sesame Oil
- 2 Teaspoons Sesame Seeds, Toasted
- Add vinegar and sesame oil into a bowl and whisk together.
- Add in the cucumbers and onion.
- Refrigerate for about an hour, occasionally stirring.
- Remove from the fridge and drain any excess liquid from the salad.
- Transfer to a new bowl, or onto a plate.
- Sprinkle on the sesame seeds. Enjoy as a side salad or add your grilled salmon or shrimp on top.
