One of the best parts of the summer is enjoying that Corn on the Cob. There’s nothing quite like it. We have been experimenting with how we prepare our corn and wanted to share some of our tips and ideas with you. Pick up Locally Grown Corn from Almeida Farms in Rehoboth, MA (8 Ears For $1.99) on sale this week. Give some of these methods a try to see what you like.
Preparing Your Corn
If your corn has many layers of husk, you can peel off the first layer or two, but you should always leave a couple layers on the corn. This will protect the corn when you are grilling it. Fill a large pot with cold water and put the corn in. Special Tip: Place a bowl upside down, on top of the corn so they are completely submerged in the water. Let them sit in the water for about 15 minutes. This gives extra moisture, allowing the kernels to steam inside the husks when they’re grilling. While the corn is soaking in the water preheat the grill to medium heat. Once the 15 minutes is up, remove the corn from the water and shake off the excess water. Peel the husks of the corn back but do not remove them. You should only be removing the silk. Use olive oil to brush over the kernels. Note: You may also use butter to brush over the corn, but we prefer olive oil. If you like to add special seasonings, now is the time to do it. You can season with salt and pepper, or get creative and add some garlic and nutmeg too. Once you are finished seasoning, use the husks to rewrap the corn.
Grilling
Allow the corn to grill for about 15 minutes. Make sure you rotate the corn periodically, to prevent it from being charred too much on one side. After you have rotated the corn a couple times, move the corn to the side of the grill (indirect heat) and place the cover on the grill. It should take roughly 15 minutes for the corn to cook. Once the husks pick up the dark silhouette of the kernels and begins to pull away from the tip, remove from the grill. You’ll be able to tell if its overcooked because the corn will be mushy. Peel the husks off completely and you may want to rinse off any ashes that get on the corn under warm running water. Grab some butter to slab on top and Enjoy!
Aluminum Alternative
You may also use aluminum foil to wrap up your corn. After you soak the ears, shake the excess water and place on a square piece of foil. Brush with oil and add any seasonings you’d like. Roll the foil up, twisting the ends to keep it together. Grill over medium heat for 15 to 20 minutes. You will know when the corn is done by pressing into a kernel, if liquid shoots out then you know it is done. Remove from the grill and unwrap the foil. Put on your dinner plate and enjoy as is or with some melted butter.
Something Different
For those of you feeling adventurous or just looking to try something a little different, we’ve got just the thing. Instead of brushing your corn with olive oil or butter, rub with Lime Wedges and sprinkle lightly with salt.
