| Vidalia Onion Cod |
- 1 ¢entsational $avings Red Pepper, Julienned
- 1 Genuine Vidalia Onion, Julienned
- 1/2 Cup Vidalia Onion Vinaigrette Dressing
- or
- Ken’s Italian Salad Dressing
- 1/2 Teaspoon Italian Seasoning
- 1 Can Crushed Tuttorosso Tomatoes
- 1 1/2 Lbs Wild Caught Alaskan Cod Fillet
- Cook the red pepper, onion, salad dressing and seasoning in a large nonstick skillet for about 5 minutes or until the veggies are tender.
- Stir in the tomatoes. Add the cod fillets. Bring to a boil. Reduce heat and bring down to a simmer.
- Place cover on and let simmer for 10 minutes, or until the fish easily flakes with a fork.
- Serve with a plate of rice.
