Recipe Type: Entree
- 1 Tablespoon Domino Light Brown Sugar
- 1 1/2 Teaspoons Chili Pepper
- Kosher Salt and Ground Black Pepper
- 4 Fresh Salmon Fillets
- 2 Tablespoons Olive Oil
- 2 Zucchini, Sliced Thinly
- 2 Summer Squash, Sliced Thinly
- 2 Scallions, Sliced
- Preheat your oven to 400°F.
- Add brown sugar, chili pepper and 1/2 teaspoon of salt to a small bowl. Mix together well. Take the Salmon Fillet and place on a rimmed baking sheet that is lined with foil.
- Take a tablespoon of olive oil and drizzle over the fish. Brush salmon with sugar mixture.
- Place the pan in the oven and let the salmon roast from 12 to 15 minutes, or until the fish becomes opaque.
- While the fish is cooking, heat the remaining olive oil (1 Tablespoon) in a large skillet over medium high heat.
- Season with salt and pepper and let cook, while tossing occasionally.
- Cook until the zucchini and summer squash are tender and begin to brown (5 to 7 minutes).
- Fold in the scallions. Serve with the salmon.
