| Orange Alaskan Cod |
- 1/2 Cup Chopped Onion
- 1 Garlic Clove, Minced
- 2 Tablespoons Fresh Parsley, Minced
- 1/2 Teaspoon Grated Grated Orange Peel
- 4 Alaskan Cod Fillets
- 1/4 Cup Tropicana Premium Orange Juice
- 1 Tablespoon Lemon Juice
- Salt
- Lemon Pepper Seasoning
- Preheat your oven to 400°F.
- Heat up a nonstick skillet and coat with cooking spray. Saute the chopped onions and garlic together until the onions become tender.
- Remove from the heat and stir in the parsley and orange peel.
- Spray a baking dish with cooking spray and lay the cod inside dish.
- Cover the fish with onion mixture.
- Mix together orange juice and lemon juice and pour over the fish in the pan. Season with salt and lemon pepper.
- Cover dish and put in the oven. Cook for 15 to 20 minutes, or until the fish flakes easily. Serve.
