- 8 Slices Plumrose Premium Bacon
- 8 Trucchi’s USDA Large Brown Eggs
- 1/3 Cup Milk
- 3 Tablespoons Water
- Salt and Pepper, To Taste
- 1/3 Cup Onion, Chopped
- 2 Prince Edward Island Potatoes, Peeled and Chopped
- 1 Tablespoon Butter
- 4 La Tortilla Factory 100 Calorie Tortilla Wraps
- Borden Shredded Cheese, Optional
- Over medium high heat, cook the bacon in a skillet until evenly browned.
- Meanwhile, take a bowl and mix together the eggs, milk, water, salt and pepper.
- Transfer the bacon to a plate layered with paper towels to drain. Keep the drippings from cooking the bacon in the skillet. Take the bacon and crumble it up.
- Place the potatoes into the skillet with the bacon drippings. Cook until they become slightly soft. Add in the onions. Stir and let cook for 1 minute.
- Pour the egg mixture in the skillet. Add bacon crumbs and butter.
- Let cook until the eggs are done to your liking.
- Spoon onto a tortilla and sprinkle on cheese before wrapping together. Serve.
