Ingredients
- 2 Cups Broccoli
- 1 Tablespoon Olive Oil
- Coarse Salt, For Seasoning
- Ground Pepper, For Seasoning
- 2 Cups Sliced Portabella Mushrooms ($2.99 – 6 oz pkg)
- 2 Bell Peppers, Cut Into Strips
- 1/4 Cup Mayonnaise
- 1 Clove Garlic, Crushed
- 4 Slices Country Kitchen Split Top Wheat Bread (2/$5 – 20 oz)
- 4 oz Land O Lakes Muenster Cheese ($3.99 lb), Thinly Sliced
Directions
Preheat broiler. Place the rack 4 inches apart from the heat. Wrap a baking sheet (rimmed) with aluminum foil. Place the broccoli on the baking sheet and toss with olive oil. Season with salt and pepper. Broil (toss a couple times) until it begins to char. This should take about 5 minutes. Next, add the sliced Portabella and bell pepper to the sheet. Add salt and pepper to season and toss. Broil (tossing once or twice) until the vegetables become tender. This should take an additional 8 to 10 minutes. Set aside. Mix together the mayonnaise and garlic in a small bowl. Add salt and pepper for seasoning. Lay out each slice of bread and distribute the mayonnaise spread evenly on each piece. Place the vegetables on top for the next layer. Place the Muenster Cheese over each piece of bread and broil for about 2 minutes, or until the cheese has melted. Serve.
