Ingredients
- 1 Small Onion, Sliced
- 1/2 Package Baby Bella Mushrooms ($1.99 – 10 oz), Sliced
- 1/2 Lemon
- 1 Clove Garlic, Finely Chopped
- 2 Shallots, Finely Chopped
- 1 Lb Salmon Fillet ($7.99 Lb)
- Spiga di Puglia Pasta (.79¢ – 16 oz)
- Salt and Pepper
- Olive Oil
- 1 Cup White Wine
- 1/2 Cup Fresh Mozzarella, Cut Into Pieces
- 1 Jumbo Hot House Tomato ($1.99 Lb), Diced
Directions
Cook pasta according to directions on package. Meanwhile, place a skillet over medium high heat. Heat up 1 1/2 Teaspoons Olive Oil. Add a dash of salt and pepper, chopped onions, shallots and garlic. After about a minute, add in the Baby Bella Mushrooms. Once the vegetables begin to tenderize, add in the salmon, skin side down. Squeeze half of the lemon over the fish. Add wine to skillet. Let the fish cook until it is cooked. Once the salmon is done, remove from heat. Drain the pasta. Flake off the salmon into chunks and add to the pasta. Take the sauce from the skillet and pour over the pasta. Add slices of mozzarella and chopped tomatoes. Serve.
