Ingredients
-2 Cups Broccoli Coleslaw Mix
- 2 Jumbo Beefsteak Tomatoes ($1.99 Lb), Freshly Chopped
- 3 Teaspoons Chopped Green Onion
- 2 Garlic Cloves, Minced
- 2 Wild Caught Alaskan Cod Fillet ($6.49 Lb)
- Ground Pepper
- 1/4 Cup Crushed Potato Sticks
- 4 Tablespoons Seasoned Bread Crumbs
- 2 Tablespoons Grated Romano Cheese
- 4 Teaspoons Butter, Melted
Directions
Preheat your oven to 450°F mix together Broccoli Coleslaw Mix, Tomato, Green Onion and garlic in a large bowl. Coat an 11×7 inch baking pan with Cooking Spray. Spread the mixture along the bottom of the pan. Add the cod Fillets into the pan, season with pepper. In a bowl, mix together potato sticks, bread crumbs, cheese and butter. Sprinkle the mixture over the cod. Bake (uncovered) for 25 to 30 minutes, or until cod flakes easily with a fork.
