Recipe Type: Side Dishes
- 3 lbs Yams
- 1/2 Cup Dole Raisins
- 1 Tablespoon Light Brown Sugar
- 1/4 Teaspoon McCormick Ground Cinnamon
- 8 oz Dole Pineapple, Drained
- 1 Teaspoon Vanilla Extract
- 3 Tablespoons Diamond Chopped Walnuts
- 1 Cup Miniature Marshmallows
- Preheat your oven to 400°F.
- Place the yams onto a baking sheet. Place in the oven for an hour, or until they become tender. Allow them to cool for 15 minutes.
- Thinly slice off the top of each yam and scoop out the pulp into a bowl.
- Mash the pulp and stir in raisins, brown sugar, cinnamon, pineapple and vanilla extract.
- Scoop the mixture up and distribute evenly among all the hollowed out yams.
- Sprinkle the walnuts and marshmallows on top.
- Preheat your oven to 350°F and bake for about 15 minutes.
