Ingredients
-1/2 Cup Diced Onion
- 1/4 Cup Diced Celery
- 3 Tablespoons Butter
- 2 Cups 4C Bread Crumbs (2/$4 – 24 oz)
- Salt and Pepper, To Season
- Pinch of Dried Tarragon
- Pinch Dried Rosemary
- 2 Lbs Haddock Fillet ($5.99 lb)
- 1 Tablespoon Lemon Juice
- 3 Tomatoes, Sliced
Directions
Preheat your oven to 375°F. Heat up butter in a large skillet. Saute the chopped onions and celery. Once veggies are tender (about 4 minutes), remove from heat. Add in the bread crumbs, salt, pepper, tarragon and rosemary. Stir. Take a 11×7 inch baking dish and grease it before laying down the haddock fillets. Sprinkle lemon juice over the fish. Take the crumb mixture and add over the haddock. Place the slices of tomatoes over the crumbs and pop in the oven. Bake for 25-30 minutes, or until fish becomes flaky.
