Recipe Type: Entree
- 1 1/2 Cups Simply Orange Orange Juice
- 1/2 Cup Sun Maid Raisins
- 1/2 Cup Orange Marmalade
- 3 Fresh Boneless Chicken Breasts, Cut into 1 Inch Chunks
- 2 Tablespoons Olive Oil
- 5 Tablespoons Brown Sugar
- 1 Teaspoon Ground Cinnamon
- 1 Cup White Rice
- 1/2 Cup Coconut Flakes
- Salt and Pepper, To Taste
- Heat up orange juice, raisins and marmalade in a saucepan. Once the marmalade melts, remove from heat.
- Mix in the brown sugar, cinnamon and rice. Set to the side.
- In a pressure cooker, heat up olive oil. Add in the chunks of chicken. Once the chicken becomes lightly browned, pour the orange juice mixture into the pressure cooker. Lock lid.
- Bring to full pressure. Cook for 10 minutes.
- Quick-release pressure, and stir in coconut flakes. Season with salt and pepper. Serve.
- Decorate your plate with sectioned Florida Fall Glow Tangerines for some color.
