Recipe Type: Entree
- 1 Package of Tortellini, or any variety of Spiga de Puglia Pasta
- 1 Cup Italian Dressing
- 1 Red Bell Pepper, Diced
- 1 Red Onion, Chopped
- 1/2 Cup Cherry Tomatoes, Halved
- 1 Tablespoon Filippo Berio Olive Oil
- 2 Tablespoons Butter
- 1 Can Trucchi’s Canned Whole Kernel Corn
- 1/2 Can Trucchi’s Mixed Vegetables
- Salt and Pepper, For Flavor
- Trucchi’s Grated Parmesan Cheese
- Cook the pasta according to the directions on the package. After draining the pasta, add 1 Tablespoon of Olive Oil to the pasta and toss well. Add salt and pepper for flavor.
- Melt the butter in a skillet. Once it is melted, add in the corn until it becomes toasted.
- Add remaining vegetables to the skillet and let them simmer for 2-3 minutes.
- Remove the skillet from heat and transfer to the bowl of pasta. Toss.
- Pour the Italian Dressing and mix until well coated.
- Serve with grated Parmesan cheese.
