Recipe Type: Entree
- 2 Locally Grown Acorn Squash, Halved, Seeded
- 2 McIntosh Apples, Peeled, Cored and Sliced Thinly
- 4 Teaspoons Land O Lakes Butter Quarters
- 4 Tablespoons Brown Sugar
- 1/2 Teaspoon McCormick Ground Nutmeg
- 1 Teaspoon McCormick Ground Cinnamon
- Preheat your oven to 350°F.
- Grease baking dish with butter and lay each piece of acorn squash into the dish (cut side down). Poke holes with fork on skin side of the squash. Cover and put in the oven for 30 minutes.
- While the acorn squash is baking, take a small bowl and mix together the butter, ground cinnamon, ground nutmeg and brown sugar. After the mixture is stirred together well, add slices of apple to the bowl, coating the apples well.
- Once the acorn squash is done baking, remove from the oven. Flip the squash to the other side, and evenly distribute the apple mixture into each acorn squash “bowl”.
- Put the cover back onto the dish and bake for another 30 minutes.
- Serve and enjoy!
