Recipe Type: Soup
- 5 Cucumbers, Peeled and Seeded, Diced
- 6 Scallions, Chopped
- 2 Tablespoons Chopped Fresh Dill
- 1/4 Cup Fresh Lemon Juice
- 1 Quart Buttermilk
- 2 Cups Chobani Yogurt
- Salt and Pepper, To Taste
- Fresh Chives, Chopped for Garnish
- Take cucumbers and season with salt. Let them sit for about a half hour. Drain.
- Toss into food processor along with scallions, lemon juice, dill, buttermilk and yogurt.
- Blend on the highest setting.
- Add salt and pepper to season.
- Serve with Chopped Chives on top.
