| Gorgonzola Gnocchi |
- Salt and Pepper, To Taste
- 1 Package Napoli Gnocchi
- Napoli Extra Virgin Olive Oil
- 5 Sliced Domestic Cooked Ham, Cut to small strips
- 1 Teaspoon Minced Roasted Garlic
- 1/4 Cup Pine Nuts
- 1/2 Cup Crumbled Gorgonzola Cheese
- 1/4 Cup President’s Fat Free Crumbled Feta
- 1 Teaspoon Lemon Juice
- 2 oz Baby Spinach
- Cook Gnocchi according to the directions on the package (reserve 1/2 Cup cooking water before draining the gnocchi). Place the pasta on a plate lined with paper towels after you drained them.
- Heat some olive oil in a large skillet over medium high heat. Add the pasta and cook until browned.
- Add in the strips of ham and stir until ham begins to brown. Add in garlic and cook for 30 seconds or so.
- Take the reserved cooking water and add to the skillet.
- Add the pine nuts, cheese and lemon juice. Stir until cheese is melted, then stir in the spinach. Continue to stir for 2 minutes (or until spinach is wilted). Add salt and pepper to taste.
