
Veggie Stir Fry

- 1 Tablespoon Olive Oil
- 4 oz Mushrooms, Scrubbed Clean and sliced
- 1/2 Cups Chopped Cabbage
- 1/2 Cup Chopped Broccoli
- 1/2 Cup Snow White Cauliflower, Chopped
- 1/2 Sweet Red Bell Pepper, Seeded and Chopped
- 1 Zucchini, Sliced Diagonally into 1/2 inch thick slices
- 1/3 Cup Water
- 1/4 Cup Simply Orange Orange Juice
- 1/4 Cup Soy Sauce
- 1 Clove Garlic, Minced
- 2 Teaspoons Cornstarch
- 2 Cups Zatarain’s Rice, Hot and Cooked
- In a large skillet heat oil on medium high heat. Put the mushrooms, cabbage, broccoli and cauliflower and pepper into the skillet. Cook for 3 minutes, then add in the zucchini and cook for another 3 minutes.
- In a bowl, mix in the water, orange juice, soy sauce, garlic and cornstarch. Stir until smooth.
- Add in with the veggies and stir fry for another minute (or until thickened).
- Serve the Veggies over cooked rice.
