| Cod With Mango Tango Salsa |

- 4 Skinned Cod Fillets
- Kosher Salt and Freshly Ground Black Pepper
- Progresso Bread Crumbs
- 1/2 Cup Scallions Sliced Thinly
- 1 Egg Beaten Together With 1 Tablespoon Water
- 2 Tablespoons of Canola Oil
- 1 cup
- Mango Tango Salsa
- Preheat your oven to 400°F.
- Take the salt and pepper and season both sides of the cod.
- Mix the breadcrumbs and scallions together on a plate.
- Taking the egg wash, use a pastry brush to coat the cod. Dip into the breadcrumb mixture, covering both sides.
- Over medium heat, saute the cod in a large pan (coat the pan with oil). Cook until both sides are brown which should take about 3 to 4 minutes.
- Put the fillets and place in the oven. Cook for roughly 6-8 minutes, or until the fish is thoroughly cooked.
- Serve with Mango Tango Salsa.
